Journal of Carbohydrates

Aims and Scope

Journal of Carbohydrates (JCH) is an open access, peer-reviewed journal that focuses on the advances in carbohydrates and carbohydrate science. The journal covers topics related to the areas including but not limited to the following: properties, functionality, molecular structure, processing and production, biochemical activity and health effects, and application of carbohydrates and hydrocolloids in food and non-food products. This includes research into foods, ingredients, and engineering; food processing and reaction engineering; engineering food for the health of consumers; food packaging and preservation technologies; sensory properties of food and health system.

In addition, the journal covers the principles, framework, and practical applications of carbohydrates and hydrocolloids related to energy, environment, biotechnology, physical properties, biosensor technology, advanced materials, and industrial applications. The journal focus on all aspects of carbohydrates, including the chemistry, structure, metabolism, and function of carbohydrates. The journal provides a platform for the exchange of knowledge and encourages discussions among scientists and industrialists interested in understanding the functions and biology of carbohydrates. The topics covered by JCH include the structure and metabolism of carbohydrates, their role in disease, and the design of new carbohydrate-based drugs, vaccines, and other therapies. The journal also publishes research that examines the relationship between carbohydrates and nutrition, as well as novel methods for analyzing carbohydrates and their links to health.

The journal aims to provide a platform for scientists and industry to discuss and promote research in the field of carbohydrates, Hydrocarbons, carbohydrate chemistry, medicinal chemistry, environmental chemistry, biomaterials, nanoscience, and sustainability. JCH also has a focus on emerging aspects of carbohydrates, and hydrocarbons such as biotechnological applications, food science, nanomedicine, energy development, and green chemistry. JCH encourages submissions relevant to basic and applied research in which the application of carbohydrates, and hydrocarbons can be explored. By providing a platform for seminal research and reviews, JCH offers readers the opportunity to stay informed on the application of carbohydrates & hydrocarbons in order to better understand, develop, and apply this field of research.

The scope of the journal also includes reviews and perspectives on the impact of carbohydrate-related research on human health, novel technologies for carbohydrate extraction and analysis, and advancements in carbohydrate-related analytical techniques, such as NMR spectroscopy, mass spectrometry, chromatography, and electrophoresis. The journal also welcomes research from a range of disciplines, such as medicine, genetics, and plant sciences.

The journal aims to advance the knowledge and understanding of carbohydrates and their importance to human health and the environment. The journal encourages researchers to submit manuscripts on a wide range of topics related to the structure, metabolism, and function of carbohydrates. The journal emphasizes topics such as carbohydrate biochemistry and metabolism, carbohydrate-based food sciences, health effects of carbohydrates, monosaccharide and oligosaccharide structure, function and recognition, glycosylation, glycoproteins, glycolipids, polysaccharides and glycosaminoglycans, glycobiotechnology, glycans and glycomic-based drug discoveries, computational and structural glycoscience, and biotechnological applications of polysaccharides.
